Hi Matad

I don't have a steam oven I have a steel plate 12mm thick I heat up at 250 deg for 1 hour then I tip the loaf onto the plate and slash then throw 5 ice cubs into a small cast iron dish on the bottom shelf and spray a few squirts of water in before closing the door then bake for 35 minutes. Never had a bad loaf since I got the steel plate heavy as hell but holds the heat like baking In the pizza oven.
