Ancient Grain (Emmer Wheat) Sourdough Success

Lorri

After many weeks and much patience I have finally succeeded in baking my first sourdough loaf using the ancient grain, Emmer Wheat. It is bio-dynamcally grown here in Australia and is stoneground (wholemeal) and I was lucky enough to find it on line. I also mixed in a small amount of organic Rye flour to the starter and the result was just amazing! I have developed a sensitivity to regular wheat and found that I was just having too many digestive problems with all wheat products although I'm not gluten intolerant. I have no problems at all with the Emmer Wheat flour and am looking forward to trying lots of delicious recipes in the future. As soon as I find out how to upload a photo I will post the pics of my success. Maybe someone out there can give me a heads up on how to do this....I try to upload the photos in a JPG format but I just get the message that an error occured and the file (x8#%*) could not be saved. Appreciate any help.
