The folk I've noted as standouts for their fine-looking rye breads are all contributors to The Fresh Loaf forum (no doubt there are some recipes on this site, too - have you searched through the Recipes section?).
There's a marvellous ex-pro-baker who posts under the name Mini Oven who specialises in rye. Have a look at this link: Mini's Favourite 100% Rye Ratio. She clearly knows her stuff and is the authority on rye on TFL. I'm sure you won't go wrong if you follow her directions.
On the same forum, there's another superb baker who also does great looking rye breads: hansjoachim. Do a search for his posts and I'm sure you'll get all the info you need to start off on the right foot.
Finally, you could contact Hanseata, who comes from Hamburg and sells her breads commercially. She is almost certain to know a reliable and authentic German rye bread recipe. She posted a great-looking recipe for German Feinbrot. I've got it starred as a priority on my ever-building list of must-try bread recipes, but this one is not pure rye, so probably won't be relevant to you.

The best rye recipe is at Breadtopia.com. It has orange zest, fennel, anise,caraway in it. It is just a wonderful tasting and baking bread. Try it. The blog master even includes a video on how he makes it. Very nice.
I learned a lot from this thread here on this forum. For me it was a very good read.
Is there anywhere in South Australia, preferably near Adelaide that I can buy bannetons or proofing baskets???
Why not just buy online from the sourdough shop? That's what I did. Comes from Tasmania so shouldn't take too long to receive.
