Good to see the forum back up...but where is everbody?
We just got through the busy season at the bakery where I work, and are settling down to normal production again. I figured out that I mixed around 10 tons of dough over the course of four days before xmas and again before the new year! Good times. I was a little stiff and sore after pulling all of that dough out of the bowl, and folding it all a few times before forming. Good thing my wife is training to be a massage therapist!
I've also been baking at home on my days off. You'd think I'd get enough dough time at work, but it's definitely a different experience to mix a few pounds of dough by hand and make whatever I want than to mix a few hundred pounds at a time. It also keeps me at home instead of wandering downtown to spend $$$ I don't have. Good way to get the chores done. I've been quite happy with the results, and we finally got a digital camera so perhaps I'll put up some of the "bread porn" y'all seem to eat up.
Come spring time we hope to build an oven in the back 40 (read "back .25"), and maybe start baking on a small scale for the loacal farmers market (at which there are no bread vendors!). I'm also apprenticing with a luthier who is a hobby baker, and we might get that going together (in our spare time?).
Just thought I'd post something up so that all of the most recent posts weren't 4+ weeks ago.

Hi Tyler, it's great to see a new forum post. Sorry for all the time offline, changing software has been quite a lot of work. Later today I have to revert back to the old database one more time to get BBCode working. This post will be lost but I'll copy it and send it to you to post again. :)
Hopefully the community will start to pick up steam soon.

I'm going to do a lot of work on this forum, making it easy to use and nice looking. In all honesty, after a couple of days if people hate this system, I would change back (we would loose a few posts). We can't loose this community though, it's wonderful. And sorry for the big down time, it's take a while to convert everything. I can't wait to get this site back on track. Do you dislike the random image? it wont appear on the forum pages, just the rest of the site.
No keep going at what your doing, patience,slow food and all that!
My site is finally coming around,hiccups and all! Graham and Maedi your all right in my book! Even with your occasional rants and the weirdos who post that filth on all the blogs (kidding of course!)
Can't wait till you start posting more baking films, splice and edit, you will have a full feature woodstock bread flick!
