starter from Einkorn wheat or sourdough with einkorn flour

MELISSA has asked: Has anyone created a starter from Einkorn wheat or made sourdough with einkorn flour? I am new to baking with wild yeast and sourdough and my 22 year old has requested I make her einkorn sourdough as she has Hashimotos thyroiditis & it was suggested by her endo to avoid gluten, which she usually does, but she was told Einkorn wheat would be a good option for her. She only eats bread on occasion now, but when she does, she will not go near standard bread and much rather have a wheat that's not GMO or sprayed with chemicals. Half the people in our house don't when eat bread {because they are low carb or by choice... And in the case of my type one diabetic 3yo it's bad for her blood sugar} but she, my 22yr old & my teenager like bread & since she's become even more health conscious than I, she really wants to try Einkorn sourdough, so I'd greatly appreciate any insight or experience you all might have. For now I've been buying a locally made true sourdough but I have no idea what kind of flour they use other than it says "unbromenated". I figure if they are going to eat bread, it should be real bread, so I am willing to try and learn how to make it for them.

Hello Melissa,

This is from a site dealing with einkorn which suggests that you should have no problems.

"However, I ran across some bloggers using Einkhorn and so I read everything I could find on it.I started cooking with Einkhorn two months ago- I do use a starter, and make sourdough bread, pizza, cookies, biscuits, etc. The flavor of this wheat is fantastic, and it has not caused ill effects like regular wheat. My adult son was very skeptical, but he has had no problems with Einkhorn, either."
