Bakers Flour v Plain Flour?

I have been using Wallaby brand unbleached bakers flour mostly. I was going to switch to organic flour from a local coop (Alfalfa House in Newtown). Can I just use an organic unbleached plain flour or does it need something added if if its not "bakers flour"?

Hi redrich,

Laucke Wallaby bakers flour has 11.5 or thereabouts protein.  If your other supply has that or thereabouts you should be fine.

So that means it needs to be 11.5% or higher protein? I also just got some Kialla plain flour. Their website says minimum 13% protein, that means its fine right?

Hi redrich,

Kialla has a fine reputation for their flours. 13% is quite strong and will be absolutely fine for bread making.
