Hi everyone. My name is Anna. I started a new sourdough starter about 5 days. The weather here in Melbourne was been warm and humid over the last week giving ideal conditions for a starter to grow. I have been following the instructions on this website. After two days I was starting to get good bubbles and the starter doubled in size. So I threw out most of it and feed it with 100g water/70g white flour/ 30g rye flour. After 12 hours it seems to be nearly at it's peak and smelling nice and sour. I might try to back a loaf with some in the couple of days but will keep feeding it for now. My aim is to create a simple sourdough loaf for my family. I have been reading a lot of the posts on here and some people seem to making amazing bread. I don't have a lot of experience in making bread, I have been dabbling with dried yeast for a while. I had made a sourdough starter a year or so ago but just as I was getting some good loaves I let it die! I think having three small children, a sourdough plant was just sone thing else to feed and it all got too much! So I'm having another go! I'll let you know how I go. Cheers Anna

Congrats on getting your starter going. The weather here is certainly helping. In this weather I usually get slack and leave my starter on the bench for a day too long and fuzzy mould takes over.
Once you're happy with your starter, don't worry about 'feeding' it between baking. If you're not going to use it for longer than a couple of days, put it in the fridge or freezer. The fridge will keep it for a few weeks and the freezer for longer. When you're ready to bake, take it out, refresh with enough flour/water for your next loaf plus enough for a little left over. If you refresh with just enough plus a little extra, you don't need to throw any out.

Yes fantastic, I hear you sister! I also am a mother of 3 with huge appetites and I have just now started my first starter!!! My goal is no cakey supermarket bread and after participating in the convent bakery bread workshop all I need is a culture and i'll be kneading and baking and my family will be smiling and content!!! Yippee.
