Welcome to The Hepi. A traditional sourdough Greek Cypriot village bread inspired by my friend, Chris Hepi, a retired Cypriot baker. Lovely aroma with the caraway seed and our customers are delighted with this new bread. And it toasts beautifully!

 

Recipe

50% wholemeal

50% rye

40% ferment (50% bakers flour, 50% water)

2% salt

2% caraway seed

2% malt 

62% water

Mix to 27oC
