I often get these ideas sometime in the middle of the night.  I don't wake up enough to write them down so some of them are lost forever.  This one; however, I managed to retain.

What about using plain yogurt as a base for a starter?  It already has a lactobacillus in it so would only need to capture environmental yeast.

Just a thought.
