Does anyone know the Australian equivalent of the French T55 flour?
I have been using the Simply No Knead untreated flour but wondered whether there was anything better on the market in Melbourne you may know.
If anyone can help, many thanks in advance.

I haven't seen any in any of the specialty shops I have been to but then again I wasn't particularly looking and I haven't visited all that many. There are a couple of on-line places in Brisbane that I know of that import it and there could easily be an equivalent in Melbourne.
The alternative would be to use mixed flours to try to simulate it. Have a look at Dan Lepards article on the topic as it relates to UK.

I would also suggest using 'Baker's Flour'. Available at Woolworths and IGA in 5kg bags. The brand i use is Wallaby's, it is high in protein.
