Hello Phil,
I think it is basically a beschamel sauce that you can flavour as much or as little as you like with, say, onions, shallots, garlic, herbs, spices etc. Can be made with milk or if you really want a fat overload you could use cream but more danger of that splitting I would think.
Let us know how you go, but I might just try it myself now that I think of it.

That is actually a great solution! Can you think of any other 'light' solution than Bechamel that is not as calorie rich?

I wouldn't attempt to compromise pizza by trying to make it low fat. I'd just not have it as often.
I don't have the book on hand right this second, but I'd be amazed if there weren't recipes for 'white' pizza in Flour, Water, Salt, by Ken Forkish....
