I'm a one-handed, because of a stroke, cook who is just now getting into sourdough bread. I would like to know if there are others like and how they manage the one-handed world of sourdough. It looks very interesting, I've been cooking my own bread for about 3 years, and finally am ready for sourdough.

If you are managing yeasted bread then there is no reason why you shouldn't be able to handle sourdough. In fact, it's probably a bit more forgiving in that you have quite a bit more time because of the lower activity of the wild yeasts.
I think it is even more satisfying once you get your hand in /;-{)}
