Dear Carol

I was biting my lips yesterday when you mentioned the C word because I just made some cheesy thing.

so don't blame me for posting this white chocolate cheesecake mousse on a brownie bottom filled with strawberry pie filling.

And NY! Pretty please?Tp those must be where the extra kilo came from, treadmill will have to come out!

No sound or sight of NZ in the horizon yet, Matthew. So, the recipe will have to do. Makes 30 5cm diameter foil cups.

[u]Bottom Brownie[/u]
125g butter
185g dark choc, chopped
3/4 C castor sugar
2 tsp vanilla essence
2 eggs, lightly beaten
1 C plain flour, sifted

Melt butter and choc. Stir in sugar and essence, then eggs. Lastly, stir in flour till just combined. If you're making the brownie by itself, pour into a 19cm square tin, greased and lined at the bottom. In this case, I poured tablespoons of batter into the foil cups. Bake in a preheated 180 C oven just for 12 mins. Will still look a little bit uncooked.

For the cheesecake, I used

Fill a tiny spoon with the filling of your choice and dig into the batter. I was in a big rush so didn't bother to prettify it...I'm sure you can do better.

Bake for 35 mins @ 170C. Cool, then refrigerate.

Yes, Carol, they are nicely portion-controlled, so it was really convenient for me to pop in 6! Fortunately, I had the sense to give away a dozen to the girls' tuition teacher. If not, I'll really need that treadmill.

As for the treadmill - better get one now together with the rowing machine and nip the flap in the bud while it is still a bud...

They do look fabulous, don't they. I think I will make a double batch for Alexander's birthday in a few weeks!

BTW, your CD is finally in the mail.

TP - now I just have to figure out what sort of birthday cake to make!

There is a recipe from Trois Gros in Roanne that is superb and relativley easy!

Tp probably has some good kid dessert or cake, mines a little to adult!

Alexander is my tall skinny kid who doesn't like jellybeans and the like, but he does like chocolate. Whenever we go to the doctor and he is offered a sweet for being good, he says, "No thanks, I don't like those, but my little brother can have it!" James is my stocky man mountain who will happily eat any old junk put in front of him - jelly lollies included!

As requested!

Le trois tiers au chcolat

4 eggs
125g sugar
125g cornstarch(corn flour I think they call it there?)
25g cocoa
20g butter for mould
Whip eggs and sugar over a double boiler (bain marie)
just till it gets warm, continue beating till doubled in volume and when beater is lifted there is a ribbon like quality!
fold in the sifted cocoa and corn flour and pour into buttered and floured mould 25cm round 5 cm high, and bake for 30 minutes at 160 celsius,
demold and allow to cool.
Chocolat mousse
125g couveture chocolat
25g sugar
2 whole eggs seperated
6 cl milk
over a bain marie melt your chocolat with the milk add sugar and yolks and mix thouroughly, beat whites stiff and fold into chocolat mixture, rest overnight.
1/2 liter heavy cream
20g sugar
put cream into a chilled bowl and beat for 7-8 minutes add sugar just to incorporate, keep chilled.

Assembling cake:
Reserve a 1/3 of mousse. Divide the cake into three even parts, start with the first layer on a cake carton or plate, cover with the 2/3rds of chocolat mousse, top the next peice of cake and layer that with the whipped cream, then palce the last tier on the top and enrobe the rest of the mousse on the surface of the whole cake.

Decorate 80g sliced and toasted almonds and chocolat shavings on the top.

In my own humble opinion I would embibe the cake layers with some simple syrup (equal parts sugar and water and a bit of liqour, kirsch wuldbe nice!

Jeremy, whats "bain marie"?? Water bath?
I know boiler only as a reservoire for hot water,for qiuck use without heating.
Double boiler were two of them ..

Somehow, I won't be surprised. Give yourself puhlenty of time, though...it's a long way away........lol.

And, thanks for your kind comments on my other hobby. BTW, I stumbled into your sourdough gallery....nice breads, especially, the pizza dough...looks like a product of a nice hot ovven.

Oh good lord you were sent to torment me, TP!

That is so beautiful ... and perfectly PORTION CONTROLLED! Which makes it extra good.

DO post the recipe ... because I save all the really good recipes for special occasions/parties/whatever.

I guess I'm trying to make sure I practise what I preach to the boys. ALL the time food and SOMETIMES food.

(But gee I could eat your food ALL THE TIME!!! )
