baked my second sourdough and had some for breakfast, one thing i've noticed is it probably isn't as airy or springy as i would want, any ideas for improvemnet?
next up i'll give pizza sourdough a shot for dinner and then do a foccasia on the weekend.

How to get your breads airy or springy? Lots of factors...and I'm not the expert. You don't need me to tell you different flours, formula and mixing process will give you different outcomes. Keep baking and make little notes in a bread diary. I'm sure others will give you more helpful hints.
