well i stumbled upon this site and made a starter using SourDom's Guide, then used his guide for kneading and mixing the results were very tasty:

Well it felt very good...until i browsed the gallery and realised how far i have to go!

baked my second sourdough and had some for breakfast, one thing i've noticed is it probably isn't as airy or springy as i would want, any ideas for improvemnet?

next up i'll give pizza sourdough a shot for dinner and then do a foccasia on the weekend.

Perfect, you've caught on real quick that we love pix! Congrats on your first and future sourdoughs. Your bread certainly looks much better than my breads in my 1st YEAR. I should take them off my gallery but...hmm...kinda sentimental about them...what the hey.

How to get your breads airy or springy? Lots of factors...and I'm not the expert. You don't need me to tell you different flours, formula and mixing process will give you different outcomes. Keep baking and make little notes in a bread diary. I'm sure others will give you more helpful hints.
