My grandma knows that my starter is still up and coming and that I've been aching to bake with it. So, to help ease the pain a little, she let me have some of hers LOL.

I baked these with it. Combo of AP flour and some dark rye. Kneaded using Dan Lepard's method of short kneads and ~10 minute rests. I don't think I'll ever go back to regular kneading- the crumb this technique produces is so light and tasty!

I love Dan's method - so long as you remember that there are other ways to make bread...

Yep, it's a great method. I use it for anything over 65% hydration, below that I still use the traditional knead.
