I have a lovely vision of your wet fingers held up to the breeze. The pics load slowly but give indication of a simple (as far as gear goes) yet masterly approach to breadmaking. Sourdough croissant? Many have tried and failed in OZ. My own personal favourite is sourdough brioche (will share this recipe in the near future).
Do you think your computer is downloading images slowly because a yeasty infection got into it's brain?
Beetroot on burgers? I though vegamite was weird! Uh oh I sound like a proponent of the word weirdo! Roasted beetroot and goat cheese though is real nice!

P.S. I have a plantain and smoked spanish paprika on for today after work!
will post only if worthy!

I like the mixing tools Bill, funny thing is, I tried to get my boys to make some to sell on the website a couple of months back. When I drew out what I wanted, it looked almost like yours, except I made them slimmer.
Well, I couldn't get them to make them anyway, maybe in the Summer. I thought it would be nice if they had a little spending money for their work. I have a 12 year old who works with wood and makes one man boats, and model boats all of the time. He made me some beautiful wooden spoons for my birthday in the Spring. Oh well, I am happy to see yours, I like your lame too, good for you Bill!

That makes sense ! I was thinkin of just a paddle for stirring sourdough starter, not dough. They do look great for stirring dough!
Have a nice tomorrow, Bill,

We can include a basic list of dough-making gear as well as some pictures from different bakers of their baking tools.
This is also the place to - very important - show the prepartion of a warm space for fermenting. I will post a pic shortly of my setup. Please feel free to provide a link to photos of your proving arrangements.

1. The furnace and baking stone. (Unglazed unsealed quarry tile)
2. The bits. Banneton from Graham, baskets from the local market ($3.00 ea). Big batch dish from Coles ($3.50).
3. Scales. Lame (Home made). Bench Knives, Large (home made), the old small one was given to me about 50 years ago when I used to work my school holidays in the Bakery behind my Mum's butcher shop at Terrigal.
4. Mixing sticks ( home made) best thing I've come across for mixing.
Those mixing sticks look like extra arms. Such leverage! And that lame might just have enough style to convince commercial bakers to stop holding double-edged razors between the lips.
Graham,
Here is my bit albeit a bit rustique, thermometer? My fingers and the wind!
The leaven that makes it happen, white and rye

Teresa, the wider handles let you get a good grip which you need for some doughs.

We will link to these from the beginners page.
