Hi Hugo. I have just made a spelt and whole wheat sourdough loaf from your recipe that you posted about three days ago. It is the first time that I have used a "sponge" as part of the process. I followed your recipe exactly and I have been delighted with the result. The bread looks good and tastes great. Many thanks.
