Somewhere in the wee hours of the morning i read something about Greek bread and basil leaves as part of a starter, but now i can't find it and the search function has failed me. I think it is in the 'how to make starter' or 'comparison of starter methods' section but.... help?
Thanks very much for this excellent website btw. Even if I weren't trying to make starter I would have found it a good cure for insomnia. Wait... no, that doesn't sound right. I meant 'if you have to be awake at 2 in the morning this is a very nice place to spend the time." And I am trying to make starter so all the better!

Ah. No. It was in the Wikipedia Sourdough article
De Vuyst L, Schrijvers V, Paramithiotis S, et al. (December 2002). "The biodiversity of lactic acid bacteria in Greek traditional wheat sourdoughs is reflected in both composition and metabolite formation". Appl. Environ. Microbiol. 68 (12): 6059–69. PMC 134406. PMID 12450829.
Nice find. Thanks for sharing.
