Scotch ovens

 I am currently in Victoria but planning a move to Queensland to help set up a new sourdough operation using a Scotch oven. I am having difficulty finding commercial suppliers of an appropriate sized and shaped peel and will also be looking for advice on how to construct a cleaning scuffle and bread tin/tray hook for use in this oven.

Hoping to hear from anyone who can point me in the right direction to enquire about these, in either of these states.

Hi Ted,

After a fair bit of phoning around the best advice I got was to 'make your own'.  I use the small aluminium head of a pizza peel from the imported foods suppliers in the city (about $35), prised off it's small handle and attached with screws to a 240cm long piece of dowel from the local hardware.  Another peel head was kindly made for me by a local stainless steel tradesman and likewise attached, the size fitting 4 of my loaves at a time.  I've seen beautiful timber peels made by people but I think my shoulders would wear out with the weight.  The scuffle is another piece of dowel with a terry towel attached with an irrigation clamp screwed down as tightly as I can.  Works well except it works loose and drops off at inopportune moments...this is a work in progress.

Thanks Lily...I too have done the phone around trick and have got much the same response. It seems that much to do with Scotch ovens these days requires some good old fashioned improvisation but I really appreciate your reply and it has spurred me on to greater things. Your idea re the scuffle is great and I will follow through with your work in progress to see what I can come up with. Thanks for taking the time....
