Hi. I am reading the bakers apprentice, and noe am making Pumpernikel, one of my favorites! My question is;
the starter for this recipe calls for one cup of barm (7 oz.). My barm is 7 oz. at 3/4 cup! What should I do? Why is mine so heavy?Should I add the 3/4 cup, and make adjustments to the liquid, or add one cup of my barm, and hope for the best? Being a newbie, I appreciate any help.

Do the addition by weight, a cup isn't the same in every part of the world.
