Is it possible to make a banana type bread using a sourdough starter. Just found this site.. I got a starter for my birthday from King Arthur's flour site. I am exited to find out all the different recipes to try
One approach is to take a recipe for a yeasted banana bread and substitute your starter for the yeast and adjust the quantities of flour and water in the recipe for the flour and water that is in the starter. 180g of 100% hydration starter for 500g flour (pro rata as necessary) is a reasonable place to start.
You will have to adjust the timings to allow for the fact that the sourdough will take a lot longer than is indicated for the yeasted recipe.
The other approach is just to type 'sourdough banana bread' into your favourite search engine and a squilliion sites with recipes will be listed and you can take your pick from whatever takes your fancy.
Or alternatively, you can take a bread recipe and add banana and see how it turns out and then adjust the recipe to your liking which can make for a very satisfying past-time.
Don't use the baking soda or baking powder and put in starter instead, with adjustments, of course, to the amount of flour and water in the recipe. This will definitely take much longer in total time, but not in terms of effort. Tell us how it works. I have not taken a cake-like recipe or muffins and used starter for rising. Interesting idea and it was on the British bake-off show this season, I think.
