Hi, I've been making sourdough for the past few months and it's been turning out pretty well so far, but the past few times I've had a go, my loaves don't hold their shape at all and just flatten out into a pancake once in the oven.
My recipe is;
500g bakers flour
375g water
150g rye starter
10g salt
some miscellaneous seeds. (I've been soaking them before I add them into the dough)
My starter is really healthy and my latest loaf proofed for a good 6 hours in the fridge but only rose about 2 inches when in the oven, I'm not sure what else I could do to get them to rise since I haven't changed anything apart from a change from my usual brand of flour (still white bakers flour)
Any advice?
