I am wanting to bake sourdough crackers to sell at our local market with a relish i make. The product requires a nutritional information label of the ingredient for consumer information because i am selling as a retail product. My starter is a white starter and i feed it a bread flour with a 13% protein. Does anyone know what the nutritional percentage values of a starter would be. If you look at an Australian food product you will know what I'm talking about. The Nutritional Calculator takes the weight of the ingredient in the recipe, in this case 1 cup unfed starter, and calculates it into a per serving 100g amount. Would appreciate any information.
