Can you use sweet potatoes to make a starter?

I was wondering if anyone knows if I could use sweet potatoes in place of the white potato in making a starter?  And if I can do I make it the same way?  Thanks

Hi cyntihia,

I imagine that sweet potato would play a similar role as a source of carbohydrate and that a one-one substitution would be as good a place to start as any.
