I make all kinds of starter, the last one was blueberry. I like to get organic grapes. Concords have different yeasts than champagne ones do. The white stuff on the grapes is wild yeast. three or four skins, 1/2 cup of flour, 1/2 cup of water and let it sit for about two days. Take 1/4 cup out and feed it 2 cups each flour and water then let it sit until bubbly 4 - 6 hours. Pour two cups off and store it then use the rest in the bake.
