Hi Matthew, much as I'm interested in your information regarding sour dough, at the moment I'm building my oven and am more interested in questioning you about the thremocouples in your oven, i.e. how many you have, where they're placed, what you use to read the output, brand of electronic device, and, most importantly I guess, do they work in producing a better product. Are you able to assist with this sort of information. I've looked everywhere for information and products with little success. Thanks and regards. Russell
