I received a large fistful of amazing raw sourdough dough from a baker. I was hoping someone could instruct me as to how i would make this dough into a strog sustainable starter..
Thanks dan
If you can weigh your materiels a simple way to do it is to just take equal parts by weight of each (sourdough, flour, water) and mix them all together. Chop the dough into little bits. Sprinkle some flour on the dough when you chop it up- that'll help keep the dough pieces as little bits. After you mix them cover it all up with plastic wrap (otherwise it'll crust up on top) and the next day you're ready to go.
If you don't have a scale take about one part by volume each of dough and water and two parts of flour. Chip-chop as above and proceed.
You'll soon have way more starter than you know what to do with!
