just wondering if anyone has any tips on using a 'cloche'?

I've used the one these guys make [url]http://www.sassafrasenterprises.com/[/url]

and this homemade one:

I usually preheat the cloche at 425F then spray a little water on the crust and bake for 45 minutes. They tend to give a reddish rustic crust. Some people like it, some don't.

Yes...a first for me too! Is the cloche heavy? Looks rustic and produces rustic bread too. However, it's rather bulky, isn't it? Don't have the space in my kitchen, and looks like something clumsy me would break.

Gosh, it's been so long...9 yrs ago?...I don't really remember. Think it was pretty good..but after that long queue, I was very hungry. This place was supposed to be good...in a smallish shopping mall (2 storeys I think) diagonally opposite the liberty bell place.

well, it's good to promote some soulful conversation anyway...! and the photograph alone was worth a look. I'll keep trying - the colour of the loaf done this way is pretty good - that's all I know so far, and the crumb is more tender..
