G'day
Hope someone out there can have a suggestion on the type of wood being used on a bakers table and whether it is oiled naturally or not.Any suggestion would mighty appreciated.

I've used 100% Tung Oil (no VOCs or any additives) just to keep the laminated strips of beech wood from drying out and possibly separating. Those fisures can then harbour bacteria, etc. My local health authority is fine with the application. I reapply a very light coat about once a year. No problems so far, touch wood.

Whatever timber you use, do not oil it. Tests have shown that the best antibacterial properties are obtained when the timber is left natural.
