Here it is saturday! Yahoo, no work, except a proposal and American Football to watch.
I recieved a new starter this week - the infamous Carl's 1847. After resusitating the starter, its ready to go. I started the new batch of low work sourdough - mix and let set 19 hours, last night. It will be ready for play around noon today for the mixdown and rising - and the kids are stoked.
27 oz Bread flour
8 oz fine grind whole wheat (I grind myself) - has a high moisture content
25 grams salt
1 cup starter
about 21 fluid oz Reverse Osmosis water.
Mix and allow to proof in the oven for 19 hours. More to come in a bit. Pictures as well!
