Just wanted to say what a great website you have here for a newby bread maker!
I have ordered some of your starter (just in case) but as I'm interested in the science behind this I am also experimenting with different several ways to start a starter - sultanas v's pineapple juice v's spring water v's tap water and then (hopefully) what types of bread it makes. I also make ginger beer so have some feel for feeding the plant and natural yeasts. Can't wait to see how it goes!
