Hello all. I would like to buy a few proving baskets. Am I right, do I have to add up all the ingredients in the recipe to determin the size of basket needed? Does that include the water? Any help gratefully received.

Yes, add up the weight of all ingredients, including the water. The 750g cane bannetons will take approx. 600g - 800g dough, the 500g cane bannetons around 400g - 700g and the 1kg bannetons will take from 900g to around 1.1kg..
Or, you can just use a kitchen mixing bowl with a tea-towl or a ricotta cheese plastic basket with a tea towel.
