Can anybody recommend websites or books on artisan baking. I'm an australian apprentice entering a competition and need to write a paper on artisan baking: the next big thing. Any information I can get would be greatly appreciated. Thanks!

In North America the book "The Breadmaker's apprentice" is easy to find through your library or a good bookstore--it gives reasonably technical info (and additional reference suggestions) on the topic. A goodish blog on bread is Farine http://www.farine-mc.com/
Another site worth checking is called Barry Harmon's Artisan Bread at http://www.artisanbreadbaking.com/
