Greetings bakers i have a bakery in Christchurch and am going through the process of putting an Alan Scott oven in - i am coming to Melbourne on the 1st sept for afew days and would be keen to see this oven in action from the firing thru to end bake if you are open to having me visit please reply to this i am mosty interested in the firing wood use and smoke ie environmental as i am putting an application into to the oca environment agency cheers regards graham
