40% whole wheat and an amazing crust

Nice flavors from a 4-day bread, with a great crust. Also happy that no dutch oven disasters ensued (unlike my last bread). To prevent that, I coated with flour and topped with flaxseed meal. Love that stuff. Big to-do list as well for after spring cleaning.
