I started my first loaf of sourdough yesterday (I got the San Fransciso starter last week from a co-worker and was dying to play with it but xmas got in the way). The starter came with a recipe and a couple of options for how much starter to add. I think my starter is very active because it should have taken 8-10 hours for the loaf to have risen according to the recipe. Instead it took less than 7 hours so when I got up this morning it was already well overproofed. It's in the oven baking anyway and I've re-fed the starter so I can have another crack at it tonight. I think this time I will proof it in the fridge overnight and use a bit less starter or try a new recipe. I hope the overproofed bread at least tastes good. Maybe it will make a good french toast.
