Fattoria Barbialla Nuova is an organic farm with self-catering accommodation in Central Tuscany. We have created a small bakery with a wood-fired oven, supplying sourdough bread to the locals who remember the traditions of the past. More importantly we share the skills to create an artisan product in your own home.
Sourdough Bread Baking Classes
Experience the art of sourdough baking for home at Fattoria Barbialla Nuova.
Below is an outline of the days’ proceedings.
FULL DAY (8.5 hours; 8:00-16:30): €140 per person, including lunch
HALF DAY (4 hours: 8:00-12:30): €60 per person, not including lunch
7am – firing the oven (optional)
8am – mixing and hand kneading dough
9am – coffee and muffin
- bread books
- fermentation process
- how to prepare and store leaven
- proofing conditions
- prepare pizza ingredients
10.30am - scaling and primary shape
12am – final shape
12:30- make pizza
14:30 – fry muffins
15:30 – bake bread
- loading the oven
- cutting the loaves
All full day and half day participants will leave with a leaven to be nutured and a loaf to be proud of as well as the recipes and knowledge to recreate your sourdough products in your own home.
*Half day participants will have to collect their loaf after 4.30pm.
