A 4 days levain recipe

I took this recipe from Éric Kayser book. It´s awesome and works well. The best is the time to be ready. Just 4 days.

DAY 1 - In a glass bowl, mix:
-20g Rye flour
-20g Mineral water (Yes ... it has to be mineral)
-5g Honey. Cover with a cloth or plastic film (In this case, make holes for the yeast can "breathe" and book a free place of the air stream. It may be in a closet.

DAY 2 - In a glass bowl, mix:
-40g Rye flour
-40g Mineral water
-5g Honey
-the previous day mixture. Cover and set aside.

DAY 3 - In a glass bowl, mix
-80g Rye flour
-80g Mineral water
-the previous day mixture
(Now without honey). Cover and set aside.

DAY 4 - In a glass bowl, mix
-100g Flour (NOW CHANGE - NOT RYE FLOUR). Preferably organic.
-100g Of mineral water
-the previous day mixture and finally you are ready to use.

You can use your yeast to make bread or pizza any recipe that takes the natural yeast.
