PLEASE CAN ANYONE HELP?!

I am trying to find organic/biodynamic sourdough bread made from freshly milled wholewheat (or spelt, kamut, rye etc. My husband is seriously ill and must avoid anything that is oxidised/rancid and I understand that flour begins to go rancid after 3 or 4 days. He is really craving bread so if anyone can help I will be very, very grateful. We are in Melbourne. Thanks.
