Yesterday my starter became acidic smelling so I knew that if I took a portion to feed then by tomorrow it would be nice and bubbly. But when I smelled, it was surprisingly plain. I looked at the lid in the afternoon and all my perforations in the lid of the jar had been blocked when the starter bubbled over. I scrubbed the holes to unblock them. Tonight, with plenty of ventilation, the jar of starter should grow nice and smelly, and I plan to bake tomorrow.
