Sourdough in China

We are baking sourdough bread in China using natural yeast from my mother in law village, this is some mountains fungus. I try using other yeast from various local market - my bread has better taste. Mostly they using this yeast to make alkoholic drinks, I;m using to bake bread. Other company in the North, using beer yeast to bake bread, this is Russian bakery in Harpin.
