Does anyone know what levit is and what is a source to get it or is it possible to make?

Levit is a bread impover AFAIK is only used in Europe mostly in Switzerland. IIRC the dosage rate is 1-2% somewhat like the Puratos products....dependng upon the breadmaking methods used....shorter process needs higher dose...
The renown Richmont school IIRC in Zurich is recommending this ingredient in many of their Swiss bread recipes...
