Sourdough starter instead of sponge?

PaddyL
When a bread recipe calls for a sponge, which usually includes the yeast in dry form, can one use a sourdough starter instead?

Hi Paddy

Sponge can also mean a mix of flour, water and sourdough starter....which, means, yes, you can use sourdough starter in place of baker's yeast. If you haven't seen Celia/Jeremy's discourse, there is some very useful conversion info starting from here.

Hope that helped.
