I'm a 24 year old university student living in the inner suburbs of Melbourne. My interest in sourdough baking was sparked a couple of years back whilst working in the Bar of a small French Bistro. The chef there started making sourdough for the restaurant - so I took some of his newly created culture home with me and started experimenting. He had never made sourdough before so we would share our experiences with each other. I've been making sourdough at home ever since.
Over the last few months I have started seriously considering taking up baking in a proffesional capacity but I am unsure of where to start. I would be looking to work in a small artisan bakery where I can learn traditional techniques and use good quility ingredients. I know baking is a demanding job with long hours and I have contempleted this for quite some time.
Are any bakeries in Melbourne looking to take on a hard-working, passionate apprentice?
If anyone has has any advice for me I would be tremendously grateful.
