So when are u going to introduce your tiny new baker graham? As a webcam fan I am intrigued about the cheese and what appears to be salad greens going into the bread?....

Our new baker is 'in training' and i do so much want to introduce her, but just have to wait to see if she wants to continue after the 2 week trial. The first few weeks are always pretty strange for a baker that is not familiar with artisan, particulalry sourdough, process. She is going well and i hope she likes it enough to stay on, otherwise you will be stuck with me in front of the lens.
This morning we made an olive loaf, which is olives, baby spinach, olive oil and rosemary mixed through a standard batard dough (sifted flour, water, salt, starter). But what you have probably seen is prep for the Romano cheese and celery loaf, where we cut up romano cheese and celery to add to the same dough (but we usually tin this one).
