Sourdough Sticks

Here is a fun fast bread to make that I just can't stop eating.  They have a nice crunky crust with a soft crumb.  I brought a bunch of them to work and we are just gobbling them down.  I like the look of them too with all of their lumps and bumps.  This is a very simple bread to make, it is just flour, water, and salt.  You can read more about it here.


Did you slash them at all?


Looks like some of them have slashes dosen't it?  No, I didn't slash them at all.  The picture makes them look larger than they really are.  I thought about slashing them but figured they were to small and wet.  The crumb is very ciabatta like with lots of big ireggular holes.

 I was wondering about the crumb LD..."big irregular holes" you say..I like em.. very rustic a bit like a big soft Italian Grissini. I have a special dinner party coming up and these would be a smash hit I'm sure.

 Yea Johnny the overall hydration of the final dough is over 75% so you get an idea of what kind of breads have that hydration and the crumb they have.  I didn't think about the hydration of the preferment being at 100% and the overall amount of preferment being 95% when I came up with my formula.  When I look back now I was trying for something in the 65% hydration range but I can't argue with the results.  I already have a request for them again for a birthday.  Grissini is something that I don't think I have ever had, I will be sure to check it out if I get a chance.
