English Muffins

My first-ever batch of muffins, and I'm not very happy with them. The sponge I made last night didn't have enough liquid in it so I had to add more to the mix this morning. I used honey for the sweetness but then I didn't like the taste of them, and I think that's probably why. And the texture was quite doughy - I was hoping for more holes! I made them at Orla's request, and she ate the one I gave her, so all was not lost. Verdict - could do better.

 They look quite good but they don't need sweetening in the recipe. English muffins should be split  not cut in half to toast. This gives a very uneven surface and interesting variations of toasted crumb.
